Newbie Insulin Resistance Diet Questions?

Anyway, I'm skinny rather than the usual overweight insulin resistant-
actually slightly underweight due to not knowing what kind of diet to eat
and fear over eating. I have several books on hypoglycemia and others. I
follow some kind of a low carb diet, but I hate it - I restrict my intake of
pasta, potatoes, refined white flower, rice - do eat beans, whole grains.
However, I can't put weight on at all.

I want to prevent diabetes and I'm sick of this fear/confusion over what to
eat.

Should I be following the Glycemia Index diet, very low carb diet or the
Exchange diet (ADA)? I feel like I can't get enough calories on the low
carb diet, as I don't want to eat meat all day long - I feel like I have to
have some carbs to have a quality life - I feel socially isolated without
carbs or alcohol or caffine, which is another thing that I'm not supposed to
have.
I have the "new glucose revolution" book, it seems reasonable. However,
people here are very pro Low Carb.
The problem is, its so restrictive, and I need to travel for work. What do
people do here who travel, how do they manage in a place like Japan/China
where everyone eats white rice - can you tolerate a little of that?

Regarding the rice, what do Japanese/Chinese diabetics do in such a
culture - do they give up all white rice altogether?

Would suggest you discuss your above concerns with your doctor(s) and
listen to what s/he would recommend about the diet you should be
following.
As for the amount of food to eat, consider asking your doctor about
supervising your use of the diabetic 2PD-OMER Approach which is

How did I miss this first time round? I'm trying to explore possible
answers to this myself atm. Successful South Indians I have found do
restrict rice quite severely, to around 1/2 cup at a time. Meal
volumes are maintained by using lots of green veggies.
The ones that are truly successful are the ones who have driven out
the world's lie that hunger is bad from their hearts so they are not
longer compelled to overeat anything whether it be rice or veggies:
